]]> Za’atar is a common plant that grows in many parts of the middle east.
It looks like oregano but tastes different. It is the predominant component in the famous za’atar spice mix.

In this simple recipe, with only 4 ingredients we will get simple and crispy potatoes with a distinctive za’atar taste.

Of course, this potato recipe will work with any herbs such as Italian oregano, thyme, rosemary, and the like.
It won’t work as well with za’atar mix (as opposed to fresh zaatar).

]]> I don’t know if this recipe has an official name, but since the first time I threw this together it has become a staple at home and friends keep asking for the recipe. It is tasty, simple, and since many people haven’t discovered bulgur, it’s often a pleasant surprise.
The bulgur is easily prepared, layered with a delicious combination of onions, garlic, and raisins, then topped with pine nuts and parsley.

I love rice, I love lentils, and I love the Mediterranean taste of this undemanding dish.
It can be a casual or festive side dish or even a meal.
Mujaddara is also a very nutritious vegan dish.

Most cook the rice and the lentils together.
Since I don’t like mushy food and in particular, mushy rice, I rather cook them separately and combine just before serving.
