Hi all! Nice to meet you and welcome to the Mujaddara project!
My name is Omry Gelber, 38, husband and father of three.
Born and raised in Israel, the land of peace (I wish, but at least there is good food here). I am not a chef but an amateur glutton who loves to eat.
I’m a mixture of West and East, holding both European and Middle Eastern roots. As for the food, I definitely know which side I prefer.
Israel is a very diverse area with both Jewish and Arab towns and villages. We occasionally enjoy meeting the people around us, making new friends and acquaintances, and discovering new places. A lot of it is done through the stomach.
Israel itself is a huge melting pot that gathered immigrants from many countries around the world.
This unification brought an immense number of food varieties, products, and recipes.
With all respect for the food that was brought from Europe, those who came from Middle Eastern countries like Morocco, Algeria, Egypt, Iraq, Iran, Surya, and Lebanon brought the most exotically scrumptious flavors and spices.
For every dish, there are many versions depending on the region’s taste, availability of products, as well as the person or family that makes it.
In this recipe website, I intend to bring those versions loved by me, including a few tweaks here and there.
As for cuisine recipe tagging (Israeli, Palestinian, Lebanese, and such), I am aware of the issue wrong “location tagging” can cause, especially for a Jewish Israeli like me sharing Arab recipes.
Please remember that the purpose of this project is to bring hearts together and further introduce amazing Arab cuisine.
