Ras El Hanout, the spice that stands at the “head of the store” is a spice blend, used mainly in North African cuisine, such as Morocco and Tunisia. The mixture is considered to be a fine mixture and is common in North African cooking.
Ras El Hanout contains up to 15 different spices, which are based on cloves, cinnamon and black and white pepper. Other spices can include cumin, nutmeg and nutmeg, coriander, turmeric, fennel, caraway and ginger. In Tunis and in different areas of Morocco add to the mixture of dried and ground rose petals.
The various spices are ground with leaves and crater and their composition varies according to the spice maker or at the request of the users, which brings the variety of spices they want to grind.
