1 big or 2 small Cauliflower
5 tablespoons Vegetable Oil
pinch of Coarse Salt
Garnish
for drizzling Extra Virgin Olive Oil
pinch of Sumac
1 cup Raw Tahini
1.5 Lemon

Some dishes are so tasty that you won’t believe how easy they are to make.
This Roasted Cauliflower with Tahini recipe is on one of those dishes.
With an extra lemony tahini, sumac and olive oil the taste of the middle east was never so close.

cauliflower into florets

Cut cauliflower into florets. Try to make them even in size.
In a large mixing bowl, mix cauliflower florets, oil and salt.

Preheat the oven to 230°C/440°F.

Baking

Spread the oiled cauliflower florets in a baking sheet.

Place in a preheated oven (230°C/440°F) for about 30 minutes.
The cauliflower is done.

Tahini Time

Prepare the Tahini by mixing a cup of raw Tahini, half a cup of water (room temperature) a juice from one lemon and pinch of salt.

* The quantities above should produce thick Tahini. You may add a bit more water if you wish a more liquide version.

Assembling the dish

Pure Tahini to a bowl or any serving dish.
Arrange the cauliflower on top of the tahini. You can "recreate" the cauliflower shape.

Garnish

Before serving, squeeze half a lemon over the dish and drizzle a bit of olive oil.

Garnish with minced cut parsley or chopped green onions.
