Za’atar is a common plant that grows in many parts of the middle east.
It looks like oregano but tastes different. It is the predominant component in the famous za’atar spice mix.

In this simple recipe, with only 4 ingredients we will get simple and crispy potatoes with a distinctive za’atar taste.

Of course, this potato recipe will work with any herbs such as Italian oregano, thyme, rosemary, and the like.
It won’t work as well with za’atar mix (as opposed to fresh zaatar).

Steps

1
Done

Preparation

Preheat oven to 430°F/220°C.
Wash and dry the potatoes - use your favorite kind, I usually prefer the red kind.
If you wish to add sweet potato, do so.

Place a sheet of parchment paper on a baking sheet.
Slice the potatoes into very thin slices without breaking the potato shape.

Place each sliced potato in a bundle (one for each potato) lightly spreading the slices.

Done

Seasoning

Pinch the za'atar leaves from the main branches and place them in a small bowl.

Add a bit of olive oil (about 2 tablespoons) and mix - this will prevent the za'atar from totally drying out.

Spread the za'atar on the potatoes and drizzle with more olive oil (about a teaspoon for every potato).
Sprinkle a pinch of salt on the potatoes.

Bake

Place in the oven on a lower (not the lowest) rack for about 45 minutes.
Enjoy!
