Directions
Za’atar is a common plant that grows in many parts of the middle east.
It looks like oregano but tastes different. It is the predominant component in the famous za’atar spice mix.
In this simple recipe, with only 4 ingredients we will get simple and crispy potatoes with a distinctive za’atar taste.
Of course, this potato recipe will work with any herbs such as Italian oregano, thyme, rosemary, and the like.
It won’t work as well with za’atar mix (as opposed to fresh zaatar).

PreparationPreheat oven to 430°F/220°C. Place a sheet of parchment paper on a baking sheet. Place each sliced potato in a bundle (one for each potato) lightly spreading the slices. |

SeasoningPinch the za'atar leaves from the main branches and place them in a small bowl. Add a bit of olive oil (about 2 tablespoons) and mix - this will prevent the za'atar from totally drying out. Spread the za'atar on the potatoes and drizzle with more olive oil (about a teaspoon for every potato). |
