Directions
Za’atar is a common plant that grows in many parts of the middle east.
It looks like Oregano but taste different. It is the predominate component in the famous Za’attar spice mix.
In this simple recipe, with only 4 ingredients we will get simple and crispy potatoes with distinctive Za’atar taste.
Of course, this potatoes recipe will work with any herb like Italian Oregano, Thyme, Rosemary and such.
It won’t work as well with Za’atar mix (as apposed to fresh Za’atar).

PreparationPreheat oven to 430°F/220°C. Place a sheet of baking paper on a baking sheet. Place each sliced potato in a bundle lightly spreading the slices. |

SeasoningBreak apart the fresh Za'atar herb to leaves or small branches and place it in a small bowl. Add a bit of olive oil (about 2 tablespoons) and mix around - this will prevent the Za'atar from totally drying out. Spread the Za'atar on the potatoes, drizzle olive oil (about a teaspoon for every potato). |
